Serving Edomae style traditional sushi with fish imported several times a week from the Toyosu Fish Market in Tokyo, and Niigata rice seasoned with two types of red vinegar. Our group brings Japanese cuisine and culture to restaurants in New York, Los Angeles, Honolulu, Shanghai and Tokyo.

Originally from Aomori of Japan, Chef Kubo has more than 25 years experience making sushi. He joins us from our sister restaurant in Hawaii.
